Emily, the Tiger Shark

My daughter, Emily is turning me into “Mom the Taxi”. She attends swimming practice 3 nights a week, girl scouts one night a week and after school activity 3 days a week. Plus she asked to go to Judo class! Judo class is currently pending review. I am looking forward to my son, Zachary getting his driver’s license in order to help transport her.

The toughest activity on Emily’s schedule for me is swimming. Swimming starts at 6:30, which means she should eat at 5:00. My other challenge is that Emily doesn’t eat a lot, least of all protein. I found this quick and easy recipe that everyone in the family likes, loaded with carbs and protein for my little “tiger shark” (the name of her swim team).

Ingredients:
1 package (7-1/4 ounces) macaroni and cheese
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 can (6 ounces) tuna, drained and flaked
1/2 cup milk
1 cup (4 ounces) shredded cheddar cheese
Italian Style Bread Crumbs, optional
Minced fresh parsley, optional

Directions:
Prepare macaroni and cheese according to package directions. Stir in the soup, tuna and milk. Pour into a greased 2-qt. baking dish. Sprinkle with cheese, italian bread cumbs and parsley if desired. Bake, uncovered, at 350° for 20-25 minutes or until cheese is melted. Yield: 4 servings.
